Easter Blessings!
Hope everyone had a Happy Easter!
We baked 2 mini bunny carrot cakes
and we baked bread for our Easter dinner,
joining Dan's family for breakfast,
and then having our delicious Easter meal!
But....
I was getting sick,
and I can't give Michelle sick germs,
so I had to abort my stay and head home on Easter Monday,
this being on Michelle's worst chemo day. : (
I was frustrated to say the least,
luckily Dan's niece was available and stepped in.
So I'm home recuperating and hoping I didn't get anyone sick!

Easter Bunny Cake
What kind of cake is an Easter Bunny Cake?

Here's a hint (what do bunny rabbits love to eat???)
Carrots of course.
I think I've been making this bunny cake all of my life.
It sure does seem that way!
I've seen bunny cake molds, but it can't get any easier than using 2 round cake pans and placing the cakes one on top of the other (side by side) and cutting the top in half, separating the 2 halves to make ears.
Get it?
Then decorate her anyway you like,
using jelly beans, licorice, shredded coconut, sprinkles, etc.
You could use a box cake mix, but I'll share my Carrot Cake recipe a lovely lady shared with me many many many years ago when I was still a young chick in my early 20's : )
Carrot Cake
1 & 1/2 cups oil
4 eggs
2 & 1/4 cups flour
1 tsp salt
2 tsp cinnamon
2 tsp baking soda
3 cups coarsley grated carrots
1 & 1/2 cups chopped walnuts
Combine sugar, oil and eggs;
beat at medium speed for 2 minutes.
Sift dry ingredients together,
add to oil mixture and beat at low speed for 1 minute.
Add grated carrots and nuts.
Spread batter in 2 round cake pans
which have been greased and floured.
Bake at 300 degrees for about 1 hour,
until cake tests done with a toothpick.
When cool, spread with cream cheese frosting.
Cream Cheese Frosting
1 pkg cream cheese
1/4 cup butter
2 tsp vanilla
1 box powdered sugar (16 oz)
Let cream cheese and butter warm to room temperature.
Beat them together and add vanilla.
Gradually beat in sugar.
Add more sugar to thicken or milk to thin, if needed,
for good spreading consistency.
Food coloring can be added to make a colorful bunny!
